Recipe: Raw Macaroon Cookies

Satisfy your sweet tooth with a healthy and satisfying snack!

Prep Time: 5 minutes Yield: 12-15 servings


Raw organic almonds*- 2 cups

Unsweetened coconut flakes - 2 cups

Coconut oil - 1/3 cup

Raw honey or pitted dates - 1/3 cup or less**

Pure vanilla extract - 1/2 teaspoon

Sea salt – dash

Stevia leaves-pinch, or to taste, or 2-3 drops liquid extract (optional)


If you're using dates, make sure to pit them.

Place all ingredients into a food processor and mix.

Form into balls and refrigerate. Keep refrigerated.

*It’s best to soak almonds in salt water overnight and dry in lowest setting oven or in a dehydrator

**If you have blood sugar problems, you can just use 2 dates and more stevia
